A valuable and expensive variety of sea urchin with high nutritional value. Wild horse-dung sea urchins are almost endangered. Zeng Yan sells them at 70 yuan each (discounted from the usual 100 yuan). They have rich orange roe sacs and a creamy, buttery flavor with a hint of sweetness.
