A new dish created by Jiang Mo for Shen Zhengze. Century eggs cut into crescent shapes and seasoned with chopped scallions, ginger, garlic, salt, vinegar, and a small amount of wild Sichuan pepper. The egg white has an elastic gelatin texture and the yolk is soft and glutinous with a peculiar flavor.
